Making Cake Fun For Everyone!

Hi Everyone,

Last week I got a call from someone who had won a gift certificate that I had recently donated to the Tennyson Center for Children.  Which was so funny because I was thinking of it that day, and then she called!

But the woman who called was so incredibly nice, and she is from Texas!  I love Texans, they are the sweetest people!  Plus I go down there 2 times a year to visit my boyfriend’s family.  Anyway, we got to talking and she really didn’t have any idea as to what she wanted to do for her husband and son.  So the next day I called her back because she was supposed to look at our website and get some ideas.  The only thing she knew was that her son’s favorite kind of cake is white wedding cake with buttercream.  I thought that was awesome, hey they don’t call them classics for nothing!

So she really left it up to me to come up with a design.  When I told her what I was thinking about doing, she loved it and gave me complete control, which is always fun!

So here is what I came up with!  I love this cake.  We swirled the frosting on the top to look like snow and then sprayed a silver sheen over that to make it look like real snow.  We made fondant fish, seaweed, and rocks for the side of the cake.  Before we we put all of that on we sprayed the side with the airbrush as opposed to mixing in color with the entire frosting.  It was different than what I normally do, but I love it!!

Only Because I have to…

Hi Everyone,

So it’s the Holiday’s.  Thanksgiving is next week!! I can’t believe it.  But I have to write about it because they are here, and it is important for everyone to do their Holiday Party Planning as soon as they can! You would not believe how many people order last minute for their events, and sometime we can help, sometimes we are fully booked.  And I do not like to turn people down! So call us to start your planning.

We have so many great appetizers to choose from, along with full dinner displays that will leave guest very happy and wanting more! Although, our portions are huge, so they would probably be wanting more the next day as opposed to that night

We also provide for you, COMPLIMENTARY Holiday Decor for you Buffet Station.  I thought this was a really cool way to get people excited about the Holidays and planning their parties because A. It’s Cold Out There-Time For SOUP!

Hi Everyone,

I am currently sitting in my office wearing a scarf.  I know I am more of a wuss than most people as I am always cold it seems.  But it got me thinking about how it is getting to be that time of the year for Soup! Now soup may quite possibly be my favorite thing to eat… I absolutely love it!  With that said, since we are still working on our new menu (should be out in the next month or so), I thought I would share ALL of the Soup’s we can do, because there are quite a few that aren’t listed on our menu.

Soup’s that are currently listed on our menu are:

Chicken Noodle, Vegetable, Creamy Corn Chowder, Baked Potato, Creamy Chicken and Vegetable, and Split Pea and Ham. And yes, they are all delicious!  If I had to recommend one from this list, it would be the Split Pea and Ham, YUM!

Soup’s that are NOT currently listed on our menu are:

Smokey Chicken Tortilla, Asparagus Soup with Herbed Goat Cheese, Italian Style Wedding, and Broccoli Cheddar!  The thing about all of these is, I love them all and absolutely cannot suggest one, because they are all great!!

So if you are looking to do something that will warm everyone up, try one or a few different kinds of our Soup, you will not be disappointed! You can always pair the soup with some sandwich’s or my favorite, the Santa Fe Salad!

How to GREEN UP Any Event With Y. Lo!

Hi Everyone,

We have a lot of great clients who use us specifically because we are a Green Caterer!  I personally LOVE to do these types of events because it is important to the Y. Lo Team.  So here are some things that you can do:

-Use Potted Plants for your centerpieces and ask your guests to take them home.  This is such a fun way to get people excited about your event.  But it also helps soooo much with the waste.  Most of the time when people order these elaborate centerpieces for the tables, they just get thrown away.

-Ask us to use as much Organic and Locally grown produce as we can find.  This might add a little bit of costs to your budget, but is a great way to Green up any event.  Supporting local farmers is very important to us and we do it as much as we can!  On a side note if you are interested in learning about CSA (Community Supported Agricultural) contact me.  CSA is a program local farmers use and you get a crate of their fresh and seasonal veggies and fruits every week.  It gets people involved with their food in a fun way (especially for kids) because you get to see when the food you eat is actually grown as opposed to just picking anything you could imagine up at the grocery store.

-Email your invites.  I cannot stress how important this is.  Save our trees and email your attendees, it is also faster and more efficient these days with all the tools you can find online with RSVPs and other things!

- Always recycle and if you can, compost at your event.  One of the good things in regards to this is we can take care of it all for you.  We can even provide you with compostable materials and composting on site!

We Like to Get to Know You Too!

Hi Everyone,

I hope everyone is staying warm!! The winter weather is here and is now snowing where I am

So last week we catered a breakfast for this really cool company.  I ended up staying at the breakfast since it was for 70 people and it was only an hour. So I got to see what this company was like, and oh my goodness, it was awesome!  Kind of crazy, but awesome!

It was a breakfast for the Extreme Club.  So everyone there had closed with at least a 100% in regards to their sales for the quarter.  Everyone starts walking in and they grab their Eggs, Potatoes, and Nutella Stuffed French Toast (Yes, it is as good as it sounds, maybe even better!) and they head to their tables.  This was not just a breakfast though, they went all out and rented tables, linens and napkins!

Then the man who ran the event starting talking and he was like, “do you guys want to eat, or should we get to the prizes?”  Of course, everyone wanted to get the prizes, and then they really wanted to get back to work, I guess that is why they are in the Extreme Club!  But anyway, they ended up giving away 3 iPads, tons of iPods, Steak Knives, Nuggets tickets with a catered meal, dinners to The Capital Grill, and Flat Screen TV!!! I was amazed by this!  That is a ton of stuff, and not just stuff, awesome stuff that anyone would love to get, especially for free

The best part was, right after they were finished everyone went right back to work.  It goes to show you who true sales people are and why they do what they do.  I just thought it was so cool to be honest with you!

Get to Know Y. Lo!

Hi Everyone,

Last week was super busy for us!  We were running around like crazy people   as usual.  Now something you probably know about Y. Lo, is we like to have fun!  Now I am not normally in the kitchen, but when I am, I just laugh so much!

So when people work in a kitchen, they have to make jokes, laugh, and have fun, otherwise they go crazy!  So our chef has come up with the idea to name our food by world.  Meaning that anytime we do something, besides boring things like boxed lunches, we call it its own world.  So we had Nacho World last week…

So, we are getting ready for the end of the day, we had delivered Nacho World, and I was heading out to pick it up.  I kid you not, when I walked into the conference room, there was cheese sauce on the walls!! Meat had somehow made its way on the floor and all over the table!  It was madness.  It was so funny because we had catered for this group of people everyday last week.  Every time we went in to pick everything up they would tell us how great everything was, but they were really excited for the Nacho’s!  And they voiced that to us everyday.  I guess they just got so excited and dug in! So when I got back to the kitchen, they asked, “how was Nacho World?”

“Well, Nacho World really is it’s own world, there was cheese sauce all over the walls!”  I explained everything else and they laughed!  The best part was the were working on Kabob World  when I walked in

The FLOW Table- Intriquing, Yes! Beautiful- Absolutely!

Hi Everyone,

I know that you have probably seen this picture before on our blog, but come on, it’s gorgeous!!  Chef Yolonda LOVES her FLOW Table and we are now offering it to anyone, for any type of event!!

I must say that this is one of a kind.  When people walk into a room with a Flow Table like this, they stop right in their tracks to check it out.  The best part about it, is that you can customize it in anyway!  You can go all out with a full on appetizer display like Crab Cakes, Chicken Satay, Brie, and Mini Beef Wellington’s!  Or you can keep your costs down and the appetizers light with things like domestic and imported cheeses, fruit, dips, and much more!  I think that is why I love a table like this, it’s so versatile, people love it, and it’s a show stopper without going too crazy.
